My Crockpot Week (Recipes Inside)

Hi Reader,

Here’s how I’m using my crockpot to make this week easier. I linked every recipe from the carousel below.

Breakfast: Slow Cooker Brown Sugar Maple Oatmeal
It cooks overnight. In the morning, I portion it out, and breakfast is sorted for the week.

Dinner, then lunches: Crockpot Chicken Tortilla Soup
I make a big batch for dinner one night, and the rest becomes the most delicious lunches. It reheats so well.

One pot, two meals: Crockpot Chili
I’m setting some aside to use as the base for my Tamale Pie. You could also spoon it into stuffed baked potatoes or sweet potatoes, or make a taco salad situation. Either way, it covers at least two meals.

To finish the week: Crockpot Ziti
Anytime I can dump pasta right into my slow cooker and it cooks perfectly, I’m down with that.

Happy Cooking!

Hi Reader, The smartest thing I do all week happens on Sunday. But we aren't talking about hours of meal prep. Frankly, I want to enjoy Sunday with my family, not spend the day in the kitchen. I still like to prep strategically to make the week a bit easier. Sometimes that means making muffins while dinner is in the oven or cooking something that takes longer than I have on a weeknight. Or doubling up a recipe to cut back on prep later in the week. This week, I am planning to roast a chicken,...

Hi Reader, If you have been part of the A Mind "Full" Mom community for a while, you have basically watched my kids grow up right alongside the recipes. You have seen me pack school lunches, work around food allergies, feed some very picky eaters, and share more than a few stories from our kitchen. And somehow, one of those picky little eaters is turning 18 this week. EIGHTEEN. I am still trying to figure out how exactly that happened. So, in honor of Layla's birthday, I thought I would skip...

Hi Reader, Mornings are often busy and hectic, especially if your child starts school at 7 am or you have to beat the morning rush and head into the office before sunrise. To make my mornings a bit less chaotic, I love turning to make-ahead breakfast recipes you can enjoy quickly (or easily pack for the road). My Favorite Make-Ahead Breakfast Recipes Freezer-Friendly Egg McMuffins: Skip the drive-thru and make a better-tasting, better-for-you Egg McMuffin. I have a hack for making eggs in...
